The Bush Kitchen's Favourite Recipes

Graham's Curried Green Bean Salad

Ingredients:

  • 2kg sliced green beans
  • 1kg sliced onions
  • Salted water
  • 750ml brown vinegar
  • 500ml (2cups) sugar
  • 25ml (2tbsp) curry powder
  • 50ml (4Tbsp) corn-flour mixed with a little water
  • 10ml (2tsp) salt

Method:

  • Boil beans & onions in salted water until just tender – drain
  • Meanwhile boil vinegar & sugar in another saucepan, stirring often, until all sugar is dissolved
  • Add salt, curry powder, corn-flour to vinegar & sugar, mix well.
  • Add sauce to beans & onions & bring to boil again.
  • Cool before serving
  • Bottle & seal immediately.
